Pulire i funghi champignon e tagliarli a fette. Affettare finemente la cipolla rossa e tritare l'aglio.

In una padella antiaderente, scaldare un cucchiaio d'olio EVO a fuoco medio e rosolare la cipolla per 3 minuti.

Aggiungere la carota tagliata a cubetti piccoli, l'aglio, il rosmarino e il timo; cuocere per 1 minuto fino a quando non sprigiona un profumo intenso.

Unire i funghi e mescolare bene, cuocere per 2 minuti, quindi aggiungere il tofu tagliato a cubetti.

Sfumare con il vino rosso, raschiando il fondo della padella con un cucchiaio di legno, e aggiungere il brodo vegetale e i pomodori pelati.

Ridurre il fuoco a medio-basso e far sobbollire per 15 minuti, mescolando di tanto in tanto, fino a quando il liquido si riduce e le verdure sono tenere.
