Risciacqua il riso integrale sotto acqua fredda corrente finché l'acqua non esce limpida, per eliminare l'amido in eccesso.

In una pentola capiente, porta a ebollizione 600 ml di acqua con 1/2 cucchiaino di sale.

Aggiungi il riso e cuoci a fuoco medio-basso per 25-28 minuti fino a cottura al dente. Nel frattempo prepara il salmone.

Condisci i filetti di salmone con sale marino e pepe nero. Avvolgi in carta forno e cuoci al forno a 180°C per 12-14 minuti, finché la carne è rosata al centro e si sfoglia facilmente.

Togli il salmone dal forno, fai raffreddare leggermente, poi sfaldalo in scaglie medie con una forchetta.

Taglia l'avocado a metà, estrai il nocciolo, taglia la polpa a spicchi e spremi il succo di limone per evitare l'ossidazione.

Dividi il riso cotto in 4 ciotole. Distribuisci il salmone, l'avocado e gli spicchi di zenzero.

Irriga con 3/4 di cucchiaio di olio di sesamo per ciotola e 3/4 di cucchiaio di salsa di soia diluita in 1 cucchiaio di acqua.

Guarnisci con semi di sesamo tostati e un foglio di alga nori ritagliato a striscioline.
