Preriscalda il forno a 180°C e rivesti una teglia di 20x15 cm con carta forno.

In una ciotola, monta gli albumi con l'uovo intero fino a ottenere un composto spumoso. Aggiungi l'eritritolo, l'acqua, la scorza di limone e l'estratto di vaniglia, mescolando bene.

Setaccia la farina di avena e incorpora delicatamente al composto. Versa l'impasto sulla teglia e cuoci per circa 15 minuti, finché non risulta leggermente dorato.
