Massaggia la punta di petto con il fumo liquido, il sale affumicato, l'aglio e la cipolla in polvere. Copri con pellicola trasparente e lascia marinare in frigorifero per almeno 2 ore, meglio per una notte.

Preriscalda il forno a 120°C. Metti la punta di petto in una teglia e coprila con carta stagnola, cuocendo per 5 ore.

Nel frattempo, prepara la salsa BBQ: in un pentolino, unisci la salsa di pomodoro, l'eritritolo, l'aceto di mele, la salsa Worcestershire, la senape, il pepe e la paprika. Cuoci a fuoco medio, mescolando, fino a quando la salsa si addensa.
