Preriscalda il forno a 180°C e rivesti uno stampo quadrato 20x20 cm con carta forno.

Tritura il cioccolato fondente a pezzetti piccoli e mettilo in un pentolino insieme all'olio di cocco a bagnomaria, mescolando fino a scioglimento completo.

In una ciotola, schiaccia la banana matura fino a ottenere una purea liscia, aggiungi lo zucchero di canna e l'eritritolo, mescola bene.

Versare il cioccolato sciolto nella banana, mescolare delicatamente.

Aggiungi la bevanda di soia e la vaniglia, mescola fino a incorporare.

In un'altra ciotola, setaccia la farina di mandorle, il cacao in polvere, la polvere proteica, il lievito, la cannella e il sale.

Unisci gli ingredienti secchi ai liquidi con una spatola, mescolando fino a ottenere un impasto omogeneo senza grumi.

Versa l'impasto nello stampo preparato, livella la superficie con una spatola umida.

Cuoci a 180°C per 24-26 minuti: il centro deve risultare leggermente morbido al tatto (toothpick test mostra briciole umide, non bagnate).

Estrai dal forno e lascia raffreddare a temperatura ambiente nello stampo per 10 minuti, poi trasferisci su griglia fino a raffreddamento completo.

Taglia in 16 quadratini (5x5 cm) e conserva in contenitore ermetico.
