Method

In una ciotola versare la farina tipo 00, la farina integrale, le proteine in polvere, il lievito di birra sbriciolato, il miele e un pizzico di sale. Aggiungere le uova intere e il latte scremato.

Impastare energicamente con le mani per 8-10 minuti fino a ottenere un composto liscio e elastico.

Incorporare il burro chiarificato a temperatura ambiente, continuando a impastare per altri 3-4 minuti finché il burro non si distribuisce uniformemente.

Formare una palla, trasferirla in una ciotola coperta con pellicola trasparente e lasciar lievitare a temperatura ambiente per 35-40 minuti fino al raddoppio.

Rimpastare brevemente l'impasto e, sulla carta forno, formare 1 palla da 140 g (testa), 3 palline graduate (50 g, 30 g, 20 g per la coda) e 5 palline da 70 g ciascuna (corpo).

Disporre le palline sulla carta forno, attaccandole leggermente tra loro a formare il corpo del bruco: coda, corpo e testa in sequenza.

Coprire con pellicola trasparente e lasciar lievitare per 25 minuti.

Preriscaldare il forno a 180°C. Spennellare il bruco con un tuorlo d'uovo leggermente diluito in 1 cucchiaio d'acqua.

Cuocere in forno caldo per 16-18 minuti finché la superficie risulta dorata ma non scura.

Estrarre dal forno, lasciare raffreddare completamente su una gratella. Se desiderato, decorare con poche gocce di cioccolato fondente fuso o con uno yogurt greco da spalmare.
