Method

Scalda il latte scremato a bagnomaria fino a 37°C circa, poi versalo in una ciotola e sciogli il lievito madre con una frusta, lasciando riposare 5 minuti.

In un'altra ciotola, mescola farina integrale, fiocchi d'avena, proteine in polvere, zucchero di canna, bicarbonato e sale.

Aggiungi le uova intere e l'albume al latte con lievito, sbatti con una frusta fino a ottenere un composto omogeneo.

Versa il composto liquido sui secchi e mescola energicamente con una spatola fino a incorporare tutti gli ingredienti senza grumi.

Aggiungi l'olio di semi in filo, mescolando bene, poi incorpora i semi di anice e l'uvetta strizzata.

Prepara uno stampo a ciambella da 22 cm: spruzzalo leggermente con olio e coprilo con carta da forno.

Versa l'impasto nello stampo, livella la superficie con la spatola bagnata, copri con pellicola trasparente e un canovaccio pulito.

Lascia lievitare in luogo tiepido per 2-2,5 ore fino al raddoppio del volume (il tempo è ridotto grazie alle proteine che accelerano la lievitazione).

A 20 minuti dalla fine della lievitazione, preriscalda il forno a 180°C in modalità statica.

Cuoci per 40 minuti fino a quando una stuzzicadenti inserito nel centro esce pulito o con poche briciole umide.

Lascia raffreddare nello stampo per 10 minuti, poi rovescia delicatamente su un piatto di portata.

Taglia in 8 fette uguali e servi a temperatura ambiente.
