Method

Pulire il polpo e le seppie sotto acqua corrente, asciugare e tagliare in bocconi da 3 cm. Lavare le cozze e le vongole sotto acqua fredda, eliminando quelle con guscio aperto.

Affettare sottilmente aglio, cipolla e sedano. Tritare finemente il peperoncino e il prezzemolo.

In una pentola grande versare l'olio e scaldare a fuoco medio. Aggiungere la soffritto di aglio, cipolla, sedano e peperoncino, cuocere per 3 minuti fino a che profuma.

Sfumare con il vino bianco e lasciare evaporare per 2 minuti.

Aggiungere i pomodori pelati e l'acqua, portare a ebollizione. Aggiustare di sale e pepe.

Immergere il polpo e le seppie nel brodo bollente, cuocere per 12 minuti a fuoco medio-alto.

Aggiungere il filetto di branzino tagliato in tranci, distribuire cozze e vongole in superficie, proseguire la cottura per 8 minuti fino a che i molluschi si aprono (scartare gli eventuali gusci rimasti chiusi).

Versare il cacciucco in zuppiera, cospargerlo generosamente di prezzemolo fresco tritato e servire caldo.
