Unisci in una ciotola la farina integrale, l'uovo, il vino bianco, l'olio extravergine e un pizzico di sale. Impasta fino a ottenere un composto omogeneo e liscio (circa 5-6 minuti a mano).

Forma una palla compatta, avvolgila nella pellicola trasparente e riposa in frigorifero per 30 minuti.

Nel frattempo, prepara il ripieno: togli la pellicola dal cioccolato e spezzettalo. Tritare finemente le mandorle pelate.

In una ciotola piccola, mescola le mandorle tritate, il cioccolato spezzettato, le proteine in polvere, la stevia, la scorza di mandarino grattugiata e un pizzico di sale.

Trasferisci il composto su un foglio di pellicola, copri e refrigera per 20 minuti. Con un coltello, ricava cilindri sottili (circa 0,8 cm di diametro) e tagliati in pezzi di 1,5 cm.

Preriscalda il forno a 180°C con carta forno sulla placca.

Su un piano leggermente infarinato con farina integrale, stendi l'impasto con un mattarello fino a 2 mm di spessore, ricavando sfoglie rettangolari.

Disponi i cilindri di ripieno sulla metà inferiore di ogni sfoglia, distanziandoli di 1 cm. Piega la metà superiore e sigilla i bordi con i rebbi di una forchetta.

Posa i calzoncelli sulla placca e cuoci in forno a 180°C per 12-15 minuti fino a doratura leggera.

Estrai dal forno con delicatezza e lascia raffreddare per 5 minuti prima di servire.
