Method

Sciogliere il lievito di birra in acqua tiepida con lo zucchero, attendere 5 minuti fino a ottenere una miscela leggermente schiumosa.

In una ciotola capiente, versare la farina integrale, quindi aggiungere l'acqua con lievito e mescolare per bagnare bene.

Incorporare l'olio extravergine, il pecorino grattugiato, il sale e il pepe. Impastare con le mani per circa 8-10 minuti fino a ottenere un impasto elastico e omogeneo.

Trasferire l'impasto in uno stampo in silicone a forma di campana di medie dimensioni (circa 24 cm) leggermente inumidito.

Coprire con un panno pulito e lasciare lievitare in un luogo tiepido e riparato da correnti d'aria per 2-2,5 ore, fino a quando il volume raddoppierà.

Preriscaldare il forno a 200°C per 10 minuti.

Infornare la campana e cuocere a 180°C per 30-32 minuti, fino a quando la superficie risulterà ben dorata e il pane suonerà vuoto al tocco.

Togliere dal forno con cautela, lasciare intiepidire per 10 minuti prima di sformare e servire.
