In una ciotola, mescola la farina di avena con il burro di mandorle e l'uovo, aggiungendo acqua poco alla volta fino a ottenere un impasto omogeneo.

Lascia riposare l’impasto per 10 minuti in frigorifero avvolto in pellicola trasparente.

Stendi l'impasto su un foglio di carta forno fino a ottenere uno spessore di circa 3 mm. Ritaglia una striscia di 15x5 cm e avvolgila attorno a un cono di acciaio da 6 cm.

Cuoci in forno preriscaldato a 180°C per 10-12 minuti, finché non risulta dorato. Lascia raffreddare completamente.

Cuoci gli asparagi a vapore per circa 4 minuti fino a renderli teneri.

In una padella, rosola il petto di tacchino tagliato a striscioline con un filo d'olio e aggiungi lo scalogno tritato. Cuoci fino a doratura.

Farcisci i cannoli con una leggera spalmata di senape, quindi aggiungi gli asparagi e il ripieno di tacchino e scalogno.
