Pulire i carciofini eliminando le foglie esterne dure e tagliare a metà nel senso della lunghezza, immergere in acqua fredda con limone per 10 minuti.

In una pentola capiente, versare aceto e vino bianco, portare a ebollizione.

Aggiungere il sale e i carciofini, cuocere a fiamma media per 8 minuti fino a renderli appena teneri ma ancora croccanti.

Scolare i carciofini in un colador e stenderli su carta assorbente pulita per 15 minuti, lasciandoli raffreddare completamente.

In una ciotola, unire olio extravergine, aglio tritato finemente, alloro spezzettato, prezzemolo, rosmarino e pepe nero macinato fresco; mescolare bene.

In vasetti sterilizzati da 250 ml, alternare strati di carciofini con qualche goccia della marinata alle erbe.

Ricoprire completamente i carciofini con olio extravergine, pressare delicatamente per eliminare bolle d'aria.

Chiudere i vasetti e pastorizzare in acqua bollente per 20 minuti (il centro del coperchio deve crearsi il sottovuoto).

Raffreddare completamente prima di riporre in dispensa al buio.
