Inizia preparando la salsa: cuoci i tomatillos, i pomodori e i peperoncini jalapeño in una pentola a fuoco medio per circa 10 minuti, finché diventano teneri.

Rimuovi dal fuoco e trasferisci il tutto in un frullatore insieme a due spicchi d'aglio, il succo di lime, sale e pepe. Frulla fino a ottenere una salsa omogenea.

In una padella, scalda l'olio d'oliva e aggiungi il petto di pollo tagliato a cubetti. Cuoci a fuoco medio, mescolando, fino a quando il pollo è ben cotto, circa 15 minuti.

Unisci la salsa precedentemente frullata al pollo e lascia cuocere a fuoco lento per altri 5-10 minuti, fino a quando il pollo è ben insaporito.
