Method

Riscaldare il latte di mandorle in un pentolino a fuoco lento e sciogliere il lievito di birra insieme all'eritritolo. Lasciare riposare per circa 5 minuti.

In una ciotola capiente, mescolare lo yogurt greco, l'uovo, la farina di avena, il sale e l'estratto di vaniglia, quindi unire il composto di latte e lievito. Impastare fino ad ottenere un composto omogeneo.

Coprire l'impasto con un canovaccio e lasciarlo lievitare in un luogo caldo per 30 minuti.

Nel frattempo, preparare la crema mescolando 80 g di yogurt greco con il cacao amaro fino ad ottenere una consistenza liscia.

Dopo la lievitazione, formare dei cilindri con l'impasto e farli lievitare per ulteriori 15 minuti.

Cuocere in forno preriscaldato a 180°C per 10-12 minuti, o fino a doratura.

Una volta cotti e raffreddati, farcire i cartocci con la crema al cacao utilizzando un sac à poche.
