Method

In una ciotola, sciogliere il lievito di birra nel latte tiepido e lasciare riposare per 5 minuti.

Aggiungere alla miscela di latte e lievito 30 g di farina di mandorle, 15 g di eritritolo, l'uovo, lo yogurt, il liquore, la scorza d'arancia, il sale e la vaniglia. Mescolare bene fino ad ottenere un impasto omogeneo.

Trasferire l'impasto in uno stampo piccolo (150 g) e coprire con pellicola. Lasciare lievitare a temperatura ambiente per 1 ora.

Dopo la lievitazione, mettere in frigorifero per 8 ore.

Togliere dal frigo e lasciare acclimatare per 1 ora. Praticare un'incisione a croce sulla superficie.

Cuocere in forno statico a 180°C per 18-20 minuti, verificando la cottura con uno stecchino.

Per la glassa, mescolare 10 g di eritritolo con un albume e qualche goccia di succo di limone fino ad ottenere una consistenza liscia.

Versare la glassa sul dolce e decorare con mandorle filettate tostate.
