Method

Tritare finemente il cedro e l'arancia candita e metterli da parte in una ciotola.

Rompere il cioccolato fondente in piccoli pezzi e tritarlo leggermente, poi mettere da parte.

In un pentolino a bagnomaria, scaldare il miele con la cannella fino a ottenere un composto omogeneo, senza bollire.

Preparare uno stampo cilindrico (diametro 22 cm) spalmandolo con olio di cocco e cospargendo di farina integrale.

In una ciotola grande, mescolare la farina integrale, il cacao, la proteina in polvere, il lievito e la mostarda.

Aggiungere alla miscela il miele con cannella, la frutta candita, le mandorle, i pinoli, il cioccolato tritato, il Marsala e l'acqua.

Mescolare vigorosamente con un cucchiaio di legno fino a ottenere un impasto denso e omogeneo.

Trasferire l'impasto nello stampo preparato, pressare leggermente il fondo con le mani e coprire con carta forno.

Riposare in frigorifero per 2 ore (anziché 4 ore a temperatura ambiente, per accelerare e controllare meglio l'idratazione).

Preriscaldare il forno a 180°C.

Rimuovere la carta forno e decorare la superficie con mandorle intere e qualche pinolo.

Cuocere in forno per 45 minuti fino a quando uno stecchino inserito al centro esce pulito.

Lasciar raffreddare completamente nello stampo per 10 minuti, quindi sformeare delicatamente.

Opzionalmente, spennellare leggermente con un velo di miele sciolto prima di affettare.
