In un pentolino, scaldare il latte di cocco light a fuoco medio, quindi togliere dal fuoco e far raffreddare leggermente.

In una ciotola, unire l'uovo con le proteine in polvere e l'eritritolo, sbattendo con una frusta fino a ottenere un composto omogeneo e spumoso.

Versare lentamente il latte di cocco nella miscela d'uovo, mescolando continuamente per evitare la cottura dell'uovo.

Aggiungere le spezie: cannella, cardamomo, noce moscata e chiodi di garofano, e mescolare bene.

Trasferire il composto in una ciotola da forno e cuocere a bagnomaria in forno preriscaldato a 160°C per circa 20 minuti, finché il centro non risulta leggermente tremolante.

Lasciare raffreddare a temperatura ambiente per 10 minuti, poi riporre in frigorifero per almeno 2 ore.

Prima di servire, spolverare la superficie con eritritolo e caramellare con un cannello da cucina per 30-40 secondi fino a formare una crosta dorata e croccante.
