In una casseruola, unisci il latte di mandorla, lo yogurt greco, i semi di vaniglia e il baccello di vaniglia. Porta a ebollizione a fuoco medio, quindi togli dal fuoco e aggiungi le bustine di tè chai. Copri e lascia in infusione per 10 minuti. Rimuovi le bustine di tè e il baccello di vaniglia.

In una ciotola, sbatti le uova, i tuorli e l'eritritolo fino ad ottenere un composto omogeneo.

Aggiungi gradualmente il composto di latte aromatizzato alla miscela di uova, mescolando bene. Incorpora le spezie: cannella, cardamomo, chiodi di garofano, noce moscata e pimento.

Versa il composto in 6 ramequin e posizionali in una teglia. Riempire la teglia con acqua calda fino a coprire la metà dei ramequin.

Cuoci in forno preriscaldato a 150°C per 30-35 minuti, finché il dolce non sarà leggermente rassodato.

Lascia raffreddare e poi riponi in frigo per almeno 2 ore.
