Prepara l'infuso speziato: in una pentola scalda 120 ml di acqua con cannella, cardamomo, chiodi di garofano, zenzero e noce moscata per 8 minuti a fuoco medio. Aggiungi il tè nero, lascia riposare 5 minuti, filtra e lascia raffreddare completamente in frigorifero.

In una ciotola monta l'albume con un pizzico di sale fino a ottenere picchi morbidi (circa 2 minuti).

In un'altra ciotola unisci lo yogurt greco con il miele e amalgama bene.

Incorpora delicatamente l'albume montato allo yogurt, poi aggiungi lentamente l'infuso speziato freddo mescolando dal basso verso l'alto.

Tritare finemente il cioccolato fondente e uniscilo al composto junto le noci tostate.

Dividi la crema in 4 bicchieri o coppe, alternando strati della miscela e spolverando con granella di pistacchio tra un livello e l'altro.

Metti in freezer per almeno 4 ore, finché non raggiunge la consistenza di un semi-freddo cremoso.

Estrai dal freezer 5 minuti prima di servire, decora con una spolverata di cannella e un'altra manciata di pistacchio.
