In una padella capiente, scaldare l'olio extravergine d'oliva a fuoco medio e aggiungere lo scalogno e l'aglio. Far soffriggere finché non diventano trasparenti.

Aggiungere i funghi prataioli e cuocere per circa 5 minuti, finché non saranno dorati. Mettere da parte.

Nella stessa padella, aggiungere il riso integrale e tostarlo per 2-3 minuti, mescolando bene.

Iniziare ad aggiungere il brodo vegetale, un mestolo alla volta, mescolando e lasciando assorbire il liquido prima di aggiungerne dell'altro. Continuare fino a cottura completa del riso, circa 20 minuti.
