Inizia preparando la base: mescola in una ciotola la farina di avena con l'eritritolo e il burro di cocco fuso fino ad ottenere un composto omogeneo. Pressa il mix in uno stampo monoporzione di 8 cm di diametro e cuoci in forno a 175°C per 10 minuti. Lascia raffreddare.

Nel frattempo, scalda il latte di soia in un pentolino senza farlo bollire.

In una ciotola, lavora la ricotta light con l'eritritolo fino a ottenere un composto cremoso. Aggiungi il latte tiepido e mescola bene.
