In una ciotola, mescola le noci pecan tritate con l'eritritolo e il burro di mandorle fino a ottenere un composto omogeneo. Trasferisci il mix in uno stampo monoporzione da 8 cm, compattando bene e riponi in frigorifero per 10 minuti.

In un'altra ciotola, unisci lo yogurt greco, la ricotta, il caffè espresso e il cacao amaro setacciato. Mescola fino a ottenere una crema liscia.

Nel frattempo, ammolla la gelatina in acqua fredda per circa 5 minuti, poi scioglila in un po' di acqua tiepida. Incorpora la gelatina al composto di yogurt e mescola bene.
