Tritura 35 g di biscotti dietetici (tipo digestive light) riducendoli in briciole e mescolali con 8 g di burro fuso e 5 ml di sciroppo d'acero. Versa il composto in uno stampo monoporzione (10 cm diametro) e pressa bene il fondo con il dorso di un cucchiaio. Riponi in frigo per 15 minuti.

Preriscalda il forno a 180 °C. In una ciotola, monta con la frusta 80 g di ricotta light (o Philadelphia light) con 40 g di yogurt greco, 10 ml di sciroppo d'acero residuo, 1/2 baccello di vaniglia (semi grattati), fino a cremosità omogenea.

Incorpora delicatamente 1 uovo intero (o 50 ml di albume se preferisci), mescolando lentamente per mantenere la leggerezza. Aggiungi 8 g di amido di mais (al posto della farina) mescolando fino a consistenza liscia.

Versa il composto nello stampo sul fondo di briciole e livella la superficie con una spatola. Inforna per 20-22 minuti: il cheesecake deve risultare appena assestato ai bordi ma leggermente ondulato al centro.

Togli dal forno e lascia raffreddare completamente a temperatura ambiente (circa 30 minuti). Tritola grossolanamente 20 g di noci pecan, mescolale con 10 ml di sciroppo d'acero e cospargi il cheesecake ancora tiepido.

Riponi in frigo per almeno 3 ore prima di servire.
