Riscalda il latte a 37°C in un pentolino. Aggiungi il lievito sbriciolato e lascia riposare 5 minuti.

In una ciotola versare la farina integrale, la farina di avena, il sale e l'olio. Aggiungi il latte lievitato e impasta per 8-10 minuti fino a ottenere un composto liscio e elastico.

Posa l'impasto in una ciotola, copri con un canovaccio umido e lascia lievitare in un luogo tiepido per 90 minuti fino al raddoppio di volume.

Trasferisci l'impasto su un piano leggermente infarinato e stendilo con un mattarello a uno spessore di circa 8 mm.

Con due stampini rotondi (uno grande da 7 cm, uno piccolo da 2,5 cm per il buco al centro) ricava le ciambelle. Disponi sulla placca del forno rivestita di carta forno.

Copri le ciambelle e lascia lievitare nuovamente per 60 minuti fino al leggero rigonfiamento.

Preriscalda il forno a 190°C.

Cuoci le ciambelle per 16-18 minuti fino a doratura leggera.

Lascia raffreddare per 5 minuti, quindi incidi leggermente ciascuna ciambella a metà con un coltello seghettato.

Farcisci con un generoso cucchiaio di ricotta salata sgocciolata, una fettina sottile di prosciutto crudo piegato, e una leggera spolverata di Parmigiano. Servi tiepido.
