Triturare finemente il cioccolato fondente con un coltello affilato o un grattugia fine in una ciotola.

In un pentolino piccolo, riscaldare a fuoco basso l'acqua con l'eritritolo, mescolando fino al completo scioglimento. Aggiungere l'olio di cocco e mescolare per 1 minuto finché non si amalgama perfettamente.

Fare scaldare il cioccolato tritato in una ciotola a bagnomaria (non deve superare i 40°C) per 2-3 minuti, mescolando delicatamente con una spatola di silicone.

Versare lo sciroppo tiepido nel cioccolato scaldato, facendo attenzione a non creare grumi. Mescolare lentamente e con costanza per 30 secondi fino a ottenere un composto omogeneo.

Aggiungere la polvere proteica, la vaniglia e il sale marino. Amalgamare completamente con movimenti decisi per 1-2 minuti.

Trasferire il composto in una ciotola, coprire con pellicola trasparente e lasciare riposare a temperatura ambiente (18-22°C) per 10-12 ore fino a raggiungere la consistenza giusta per la modellazione.

Stendere con un mattarello tra due fogli di carta forno oppure modellare direttamente con le mani (inumidite leggermente) a seconda dell'uso desiderato.
