Method

Affettare finemente le cipolle e tagliarle a julienne. Rosolare la pancetta di tacchino sminuzzata in una pentola antiaderente con l'olio, a fuoco medio per 3 minuti fino a renderla croccante; scolare su carta assorbente.

Aggiungere le cipolle al fondo della pentola e cuocerle a fuoco medio-basso per 15 minuti, mescolando frequentemente, finché non diventano morbide e leggermente caramellate; salare e pepare.

Versare il brodo, l'acqua e i pomodori pelati nella pentola; aggiungere la pancetta e 3-4 foglie di basilico. Portare a ebollizione e cuocere coperto a fuoco medio per 12 minuti.

Nel frattempo, montare leggermente gli albumi in una ciotola con la ricotta, il sale, il pepe e il basilico rimasto, fino a ottenere un composto omogeneo e un po' spumoso.

Alzare leggermente il fuoco, incorporare il composto di ricotta e albumi alla cipollata mescolando delicatamente; cuocere per 3 minuti senza portare a forte ebollizione, affinché gli albumi si coagulino dolcemente.

Tostare leggermente il pane di segale in tostapane. Servire la cipollata calda in ciotole, accompagnando con le fette di pane tostato e una macinata di pepe fresco.
