Preriscaldare il forno a 180°C. Riempire una pentola alta di acqua e portare a ebollizione.

Tagliare la parte superiore di ogni cipolla, creando un coperchietto; svuotare delicatamente l'interno con un coltellino affilato, ricavando una cavità. Tritare finemente la polpa ricavata (circa 80 g).

Immergere le cipolle cave in acqua bollente per 10 minuti affinché diventino leggermente morbide, poi scolarle e adagiarle in una pirofila da forno.

In una ciotola, unire il tacchino macinato, la ricotta, il parmigiano, l'uovo, il pangrattato integrale, il prezzemolo tritato e la polpa di cipolla cotta. Mescolare bene e aggiustare di sale e pepe.

Distribuire equamente il ripieno nelle cavità delle cipolle, compattandolo leggermente. Coprire ogni cipolla con il rispettivo coperchietto.

Affettare l'aglio e disporlo intorno alle cipolle. Versare i pomodori pelati attorno, cospargere con un pizzico di paprika e drizzare l'olio extravergine sulle cipolle.

Infornare a 180°C per 25 minuti, finché le cipolle risultano tenere e il ripieno cotto. Servire tiepido.
