Metti i noodles di riso integrali in ammollo in acqua calda per circa 10 minuti, finché non risultano morbidi. Scolali e mettili da parte.

In una ciotola, mescola la salsa di soia, la salsa di pesce e la pasta di tamarindo. Metti da parte.

Scalda l'olio di cocco in un wok o in una padella grande a fuoco medio-alto. Aggiungi il pollo e il tofu, e cuoci per circa 5-6 minuti, fino a doratura e cottura completa.

Aggiungi l'aglio tritato e cuoci per altri 1-2 minuti, mescolando.

Versa la miscela di salse nel wok e aggiungi i noodles scolati. Mescola bene e cuoci per 3-4 minuti, finché i noodles non sono caldi.

Sposta i noodles a un lato del wok e rompi le uova nell'altro lato. Mescola le uova fino a che non sono cotte, poi amalgama tutto insieme.
