Method

Inizia preriscaldando il forno a 220°C. Fodera una teglia con carta da forno.

Porta a ebollizione 400 ml di acqua in una casseruola e aggiungi il riso integrale. Riduci la fiamma, copri e cuoci per 30 minuti o fino a completa assorbimento dell'acqua.

Disponi i pomodorini, la cipolla e l'aglio sulla teglia e irrorali con un cucchiaio d'olio. Arrostisci in forno per circa 20 minuti, fino a quando saranno ben dorati.

Nel frattempo, in una padella scalda un filo d'olio e aggiungi il peperoncino jalapeño tritato. Cuoci per qualche minuto fino a renderlo tenero.

Aggiungi i piselli, le carote e la patata dolce tagliata a cubetti nella padella. Cuoci fino a quando le verdure saranno tenere.

Frulla le verdure arrostite con un po' di sale fino a ottenere una crema omogenea.

Unisci il riso cotto e la crema di verdure nella padella con le altre verdure. Mescola bene e cuoci per altri 5 minuti.

Servi con un cucchiaio di yogurt greco e una spolverata di coriandolo fresco.
