Method

Preriscaldare il forno a 180°C e foderare due teglie con carta da forno.

In una ciotola, setacciare insieme farina integrale, cacao in polvere, polvere proteica, lievito e sale.

In un'altra ciotola, mescolare il burro di arachidi con l'olio di cocco ammorbidito, fino a ottenere una crema omogenea.

Aggiungere le uova una alla volta al composto di burro e arachidi, mescolando bene dopo ogni aggiunta.

Incorporare lo zucchero di canna, la stevia, l'estratto di vaniglia e il caffè solubile, continuando a mescolare fino a ottenere un composto cremoso e ben emulsionato.

Versare il composto secco nel composto umido in tre riprese, mescolando delicatamente con una spatola per non smontare il composto.

Aggiungere l'acqua tiepida per raggiungere la giusta consistenza (l'impasto deve essere morbido ma coeso).

Con un cucchiaio, prelevare porzioni di pasta (circa 12-13g ciascuna) e disporle sulle teglie a distanza di 3-4cm.
