Preriscaldare il forno a 160°C e foderare una placca con carta forno.

Distribuire le nocciole sulla placca e tostare per 6-7 minuti, finché non sviluppano un profumo dolce ma rimangono leggere: non devono brunire eccessivamente.

Estrarre la placca dal forno e trasferire le nocciole su un asciugamano per raffreddare completamente (almeno 10 minuti).

Versare le nocciole fredde in un robot da cucina (o frullatore potente) e tritare fino a ottenere una farina grossolana: circa 20-30 secondi con pause per mescolare.

Aggiungere l'olio di cocco sciolto a temperatura ambiente e frullare per 1-2 minuti, raschiando le pareti ogni 30 secondi: la crema inizierà a formarsi.

Incorporare le proteine in polvere, il miele, il sale e l'estratto di vaniglia; frullare per altri 1-2 minuti fino a raggiungere una consistenza liscia e cremosa.
