Preriscaldare il forno a 160°C.

In un pentolino antiaderente, sciogliere lo zucchero di canna a fuoco medio-alto fino a ottenere un caramello ambrato (circa 5-6 minuti), mescolando costantemente. Aggiungere le noci macadamia tritate e versare subito il caramello negli stampini di ceramica precedentemente spruzzati di olio di cocco.

In una ciotola, sbattere gli albumi con una frusta fino a renderli spumosi. Aggiungere lo yogurt greco, il latte scremato, l'essenza di vaniglia e il sale, mescolando delicatamente fino a ottenere un composto omogeneo.

Versare il composto negli stampini sopra il caramello.

Disporre gli stampini in una teglia, versare acqua calda fino a ¾ dell'altezza dei contenitori, e cuocere a bagnomaria in forno per 30-35 minuti, fino a quando la crema è appena rassoda ma ancora leggermente tremante al centro.

Togliere dal forno e lasciar raffreddare a temperatura ambiente per 1 ora.

Trasferire in frigorifero per almeno 2 ore (o preferibilmente una notte).

Passare una lama sottile attorno ai bordi dello stampino e rovesciare su un piatto. Servire subito.
