In una ciotola, unisci la farina di grano saraceno, l'uovo, il latte di soia e un pizzico di sale. Mescola bene e aggiungi l'acqua poco a poco fino a ottenere una pastella liscia e omogenea.

Scalda una padella antiaderente a fuoco medio e ungila con un velo d'olio. Versa metà dell'impasto e cuoci per 2-3 minuti fino a doratura, poi gira la crêpe e cuoci l'altro lato per 1-2 minuti. Ripeti l'operazione con l'altra metà dell'impasto.

In una ciotola, mescola il tonno con il succo di limone, il pomodoro a cubetti e la rucola.

Farcisci ogni crêpe con il composto di tonno e aggiungi le fettine di avocado.
