Prepara la salsa: in una ciotola mescola lo yogurt greco con il succo di limone appena spremuto, aggiungi l'aglio tritato finemente, l'erba cipollina e l'aneto minuzzati; mescola bene e riponi in frigorifero.

In un'altra ciotola, versa la ricotta e mescola con la menta fresca tritata, il pecorino grattugiato, il sale e il pepe fino a ottenere un composto omogeneo.

Aggiungi l'uovo intero al composto di ricotta e amalgama delicatamente con un cucchiaio fino a incorporare completamente.

Versa il pangrattato integrale in un piatto piano. Con le mani leggermente umide, forma 12 palline dal composto di ricotta (circa 30 g ciascuna), appiattiscile leggermente a forma di disco di 2-3 cm di spessore e passale nel pangrattato, premendo affinché aderisca bene su entrambi i lati.

Disponi le crocchette su una teglia rivestita di carta forno e nebulizza ogni crocchetta con spray di olio da 2-3 lati.

Cuoci in forno preriscaldato a 200°C per 18-20 minuti, girandole a metà cottura, finché non diventano dorate e croccanti.

Estrai dal forno, lascia riposare per 2 minuti e servi calde con la salsa allo yogurt a parte.
