Preriscalda il forno a 190°C. Fodera una teglia rotonda (Ø 26 cm) con carta forno.

In una ciotola, mescola la farina di mandorle, la farina d'avena integrale, il sale e la cannella.

Aggiungi l'olio di cocco fuso, l'albume d'uovo, lo zucchero di canna e l'estratto di vaniglia. Impasta rapidamente con le mani fino a ottenere una consistenza sabbiosa.

Stendi l'impasto tra due fogli di carta forno e trasferiscilo nella teglia, pressando delicatamente per rivestirla in modo omogeneo.

Pela le mele, tagliale in quattro spicchi, rimuovi il torsolo e affettale in fettine sottili.
