In una ciotola, mescola la farina di mandorle, la proteina in polvere, l'eritritolo e il tuorlo d'uovo, unendo l'olio di cocco fino a ottenere un impasto sabbioso.

Stendi l'impasto in uno stampo monoporzione da 10cm, formando la base e cuoci in forno preriscaldato a 180°C per 10 minuti.

In un'altra ciotola, unisci lo yogurt greco, l'albume, l'eritritolo, la vanillina e la cannella, mescolando bene.

Distribuisci le pesche sciroppate sulla base cotta, versa sopra la crema di yogurt e spolvera con le mandorle a lamelle.

Rimetti in forno e cuoci per altri 15 minuti, finché la crema non è dorata.
