Riscalda il forno a 180°C. Mescola in una ciotola l'eritritolo fino a ridurlo in polvere fine con una forchetta.

Aggiungi il burro chiarificato, l'uovo, la farina d'avena, il lievito e il sale; mescola fino a formare un impasto omogeneo e compatto.

Avvolgi l'impasto nella carta forno e mettilo in frigorifero per 45 minuti.

Frulla le fragole fresche con la ricotta magra, il protein powder, la vaniglia e il succo di limone fino a ottenere una crema liscia e aerea (non frullare troppo per non smontare la ricotta).

Estrai l'impasto dal frigorifero e dividi in due parti: ¾ per la base e ¼ per il reticolo.

Stendi la parte più grande tra due fogli di carta forno e adagia nella teglia rettangolare (20x26 cm); elimina la carta superiore e pareggia i bordi con un coltello.

Stendi la restante pasta frolla e ricavane strisce sottili con una rotella da pasticceria.

Versa la crema di ricotta e fragole sulla base, distribuendola in modo uniforme.

Disponi le strisce di pasta in reticolo incrociandole sulla superficie.

Cuoci in forno a 180°C per circa 28 minuti, fino a quando la base risulta dorata e croccante. Se la superficie si imbrunisce troppo, copri con un foglio di alluminio negli ultimi 5-7 minuti.

Togli dal forno e lascia raffreddare completamente prima di servire a temperatura ambiente.
