Preparare la pasta frolla leggera: mescolare farina integrale, farina di mandorle, olio di cocco fuso, uovo e un pizzico di sale. Impastare fino a ottenere un composto omogeneo, avvolgere in pellicola e riposare in frigorifero per 20 minuti.

Ammorbidire la gelatina in acqua fredda per 5 minuti.

Preriscaldare il forno a 180°C. Stendere la frolla in una tortiera da 24 cm, creando bordi alti 2,5 cm. Cuocere per 12-15 minuti fino a doratura leggera. Sfornare e far raffreddare.

Preparare il cremoso: in una ciotola, unire lo yogurt greco, il miele e gli albumi montati a neve ferma. Incorporare delicatamente con una spatola.

Riscaldare leggermente i succhi di limone e arancia (non bollire), sciogliervi la gelatina ammorbidita e mescolare fino a completo dissolvimento.

Far intiepidire il composto di gelatina e succhi, poi incorporare gradualmente nello yogurt montato, insieme all'estratto di vaniglia e alle scorze grattugiate.

Versare il cremoso nella base di frolla, livellare con una spatola bagnata e refrigerare per almeno 4 ore.

Prima di servire, decorare con fettine sottili di limone e arancia fresche e una spolverata di cannella.
