Method

Versa la farina integrale in una ciotola con il burro ammorbidito, l'uovo e il sale. Impasta rapidamente con le dita fino a ottenere un composto sabbiato, poi compattalo in un panetto.

Avvolgi l'impasto nella pellicola trasparente e riponi in frigorifero per 30 minuti.

Preriscalda il forno a 180°C. Stendi l'impasto tra due fogli di carta forno fino a 4 mm di spessore.

Trasferisci la pasta in uno stampo per crostata da 16 cm (oppure forma 4 crostatine singole), bucherella il fondo con una forchetta e cuoci per 15-18 minuti fino a doratura.

Estrai dal forno e lascia raffreddare completamente su una gratella.

Prepara la ganache: riscalda la panna a fuoco medio, versa il cioccolato fondente tritato e il cacao, mescola fino a completa fusione. Aggiungi il miele e la gelatina precedentemente sciolta in 10 ml di acqua tiepida.

Versa la ganache sulla base raffreddata, distribuisci i lamponi freschi sulla superficie.

Riponi in frigorifero per almeno 4 ore fino a rassodamento completo.

Servi fredda, direttamente dal frigo, per una ganache cremosa e saporita.
