Method

Preriscaldare il forno a 180°C e rivestire una tortiera da 20 cm di diametro con carta forno.

Tritare finemente 60 g di marron glacé e 30 g di noci; mettere in una ciotola.

Preparare il crumble: mescolare 20 g di noci rimanenti, 15 g di farina, 5 g di proteine in polvere, 5 g di zucchero e 5 g di olio di cocco fino a ottenere una consistenza granulosa.

In una ciotola, montare l'uovo con 30 g di zucchero fino a renderlo spumoso (circa 2 minuti).

Aggiungere delicatamente il latte scremato, poi la farina e le 35 g di proteine in polvere setacciate insieme, il lievito e il sale.

Mescolare fino a ottenere un impasto omogeneo, incorporare i marron glacé e noci tritati.
