Method

In una ciotola, mescola la farina di mandorle con il burro di mandorle e l'acqua fino a ottenere un impasto omogeneo. Stendilo su un foglio di carta forno in un rettangolo di circa 10x8 cm.

In un pentolino, scalda 25ml di acqua con l'estratto di mandorla. Quando inizia a bollire, togli dal fuoco e aggiungi la proteina in polvere, mescolando bene fino a ottenere una consistenza cremosa.

Incorporare l'albume montato a neve nella pasta, mescolando delicatamente.

Distribuire il composto proteico sulla base di farina di mandorle, livellando con una spatola. Infornare a 180°C per circa 15 minuti fino a doratura.

Per la glassa, mescola l'eritritolo con lo yogurt greco, aggiungendo un po' d'acqua se necessario per ottenere una consistenza fluida.
