Method

Preparare la base: mescolare 30g di farina di mandorle con 15g di burro ammorbidito e 15ml di acqua fino a formare un impasto compatto. Stenderlo su carta forno in un rettangolo di circa 12x8cm.

In un pentolino, portare a ebollizione 40ml di acqua con 25g di burro, aggiungere 1/2 cucchiaino di estratto di mandorla e togliere dal fuoco. Incorporare 25g di farina di mandorle mescolando fino a ottenere una pasta compatta.

Aggiungere gradualmente 1 albume battuto alla pasta, mescolando bene fino a raggiungere consistenza cremosa.

Distribuire il composto sulla base, spianando con una spatola. Infornare a 180°C per 18-20 minuti fino a doratura.

Preparare la glassa: mescolare 20g di eritritolo con 1/4 cucchiaino di estratto di mandorla e 30g di yogurt greco 0%, aggiungendo gocce di acqua se necessario.

Una volta raffreddato, drizzlare la glassa sulla superficie.
