In una ciotola, combina la farina di mandorle, il cacao amaro e le proteine in polvere, mescolando bene per amalgamare gli ingredienti secchi.

In un'altra ciotola, unisci l'eritritolo e lo yogurt greco, mescolando fino a ottenere un composto omogeneo.

Aggiungi l'uovo e l'estratto di vaniglia al mix di yogurt, mescolando fino a ottenere una crema liscia.

Incorpora gradualmente il mix di farine e cacao nella crema di yogurt, mescolando delicatamente con una spatola.

Forma un cilindro con l'impasto e avvolgilo nella pellicola trasparente. Riponi in frigorifero per circa 30 minuti per farlo rassodare.
