Preriscalda il forno a 180°C e prepara due stampini da soufflé foderandoli con un filo d'olio.

In una ciotola, mescola la ricotta, la farina, il parmigiano, il sale e il pepe.

In un'altra ciotola, separa i tuorli dagli albumi. Aggiungi gli spinaci tritati ai tuorli e mescola bene.

Unisci il composto di ricotta ai tuorli e amalgama il tutto.

Monta gli albumi a neve ferma e incorpora delicatamente un terzo di essi al composto, poi aggiungi il resto con movimenti dal basso verso l'alto.
