Preriscalda il forno a 180°C. Fodera una teglia con carta da forno.

Lava e taglia il rabarbaro a pezzetti, quindi mettilo in una ciotola e condiscilo con il succo di limone e un cucchiaio di eritritolo.

In un'altra ciotola, mescola la farina integrale, i fiocchi d'avena, il burro di mandorle fuso, l'eritritolo rimanente e la cannella fino a ottenere un composto sbriciolato.

Distribuisci metà del composto sul fondo della teglia, poi aggiungi il rabarbaro uniformemente sopra.

Cospargi il restante composto di avena sopra il rabarbaro.
