Method

Preriscalda il forno a 200°C. In un pentolino, porta a ebollizione l'acqua con l'olio di cocco e un pizzico di sale.

Aggiungi la farina di mandorle e le proteine in polvere setacciate, mescolando energicamente fino a formare un impasto omogeneo.

Lascia riposare per 3 minuti, poi incorpora l'uovo intero e l'albume uno alla volta, mescolando fino a ottenere un composto lucido.

Trasferisci il composto in una sac à poche e forma un bastoncino di circa 10 cm su una teglia rivestita di carta da forno. Cuoci in forno per 18-20 minuti fino a doratura.

Dopo averli sfornati, lascia raffreddare e taglia a metà longitudinalmente, svuotando leggermente l'interno.
