Method

In un pentolino, scaldare 40ml di acqua con 6g di yogurt greco, un pizzico di sale e 10g di eritritolo fino a raggiungere i 100°C per circa 3 minuti.

Aggiungere 30g di farina di mandorle e mescolare energicamente fino a ottenere un impasto omogeneo.

Lasciare intiepidire per 5 minuti, poi incorporare 1 uovo intero e mescolare bene fino a che non si amalgama completamente.

Trasferire l'impasto in una sac à poche e formare 2 bastoncini di circa 4 cm su una teglia rivestita di carta forno.

Cuocere in forno preriscaldato a 190°C per 18-20 minuti, fino a doratura e gonfiore.

Far asciugare in forno spento per 8 minuti.

Preparare il ripieno mescolando 80g di ricotta light, 20g di yogurt greco, 10g di parmigiano grattugiato, erbe aromatiche tritate, paprika e pepe a piacere.

Farcire gli éclair con il composto di ricotta e servire subito.
