Preriscalda il forno a 180°C e fodera uno stampo da plumcake con carta da forno.

Taglia il pane integrale a cubetti e distribuiscilo uniformemente nello stampo.

In una ciotola, sbatti 3 uova intere con 350 ml di latte di cocco leggero, un cucchiaino di estratto di vaniglia e 30 g di dolcificante naturale a scelta.

Versa il composto di uova e latte sul pane, assicurandoti che ogni pezzo sia ben imbevuto.

Lascia riposare per 10 minuti, poi inforna per circa 30-35 minuti, finché non si rapprende e diventa dorato.
