Precalda il forno a 180°C. In un piccolo tegamino unisci il chili senza fagioli (100 ml) con la salsa enchilada (50 ml) e il chili powder (0,5 cucchiaino), portando a sobbollire a fuoco medio-basso per 3-4 minuti.

In una piccola padella antiaderente, scalda 1 cucchiaio di olio EVO con il chili powder rimanente a fuoco medio. Immergi la galetta proteica per 2-3 secondi per ammorbidirla, poi posizionala su un piatto.

Distribuisci al centro dell'involucro 30 g di formaggio cheddar grattugiato, 1 cucchiaio di cipolla tritata finissima e 15 ml della salsa chili preparata.

Arrotola strettamente l'involucro sigillando la cuciture verso il basso in una piccola pirofila rettangolare da 20x15 cm.

Versa il resto della salsa chili sull'enchilada, copri con i rimanenti 20 g di formaggio cheddar.

Cuoci in forno per 12-15 minuti fino a quando il formaggio è fuso e leggermente gratinato.
