Method

Lavare bene le patate sotto acqua fredda e asciugarle completamente con carta assorbente.

Sbucciare le patate e tagliarle in fettine sottili di circa 2-3 mm di spessore con un affettatrice o un coltello affilato.

Disporre le fettine di patata su due teglie rivestite di carta forno, in un unico strato senza sovrapposizioni.

Preriscaldare il forno a 70°C e inserire le teglie sulle due griglie centrali.

Disidratare per 6-8 ore (fino a quando le patate diventano completamente fragrili e croccanti), aprendo il forno ogni 2 ore per favorire la circolazione dell'aria.

Estrarre le patate dal forno e lasciarle raffreddare completamente per 10-15 minuti.

Trasferire le chips disidratate in un mixer ad alta potenza e polverizzare fino a ottenere una consistenza fine e uniforme (circa 45-60 secondi).

Aggiungere la polvere proteica e il sale marino, e mescolare bene con un mestolo per 30 secondi.
